– 4 large bell peppers (any color)- 1 pound ground beef, turkey, or a veggie mix- 1 cup cooked rice (brown or white)- 1 can black beans, drained and rinsed- 1 cup corn (frozen or canned)- 1 cup salsa- 1 teaspoon chili powder- 1 teaspoon cumin- Salt and pepper to taste- 1 cup shredded cheese (optional)

Instructions

1. Preheat your oven to 375°F (190°C).2. Cut the tops off the bell peppers and remove the seeds.3. In a large skillet, brown the ground meat of your choice over medium heat.
